Vegan Quinoa Granola

INGREDIENTS
  • 2 cups oats
  • 1 cup uncooked quinoa
  • 1/2 cup nuts of choice (i used almonds)
  • 1 cup shredded coconut
  • 1/4 tsp cinnamon
  • 1/2 tsp  salt
  • 2/3 cup maple syrup
  • 1/4 cup coconut oil
  • 1 mashed banana
  • 1 tsp vanilla
INSTRUCTIONS
  1. Preheat oven to 170 ° c
  2. In a large bowl, mix together dry ingredients. Pour in maple syrup, coconut oil, mashed banana and vanilla and stir until well-combined.
  3. Spread mixture evenly onto one baking sheet and bake for 20 minutes or until golden brown, stirring once or twice.
  4. Remove from oven.
  5. Let cool completely before breaking into chunks. Store in a container or jar with an air-tight seal – it should keep for a couple weeks.

Easy coconut muesli

Do you want to make some delicious muesli but don’t want to put to much time in it?  This is the perfect recipe for you!

Ingredients:

1 + 1/2 cup oats

1/4 cup coconut oil

1/2 cup dessicated coconut

4 medjool dates / chopped up

1 tbsp agave or maple syrup

1 tsp coconut sugar

1/3 cup hemp seeds, chia seeds, pumpkin seeds,…

Method:

pre heat oven to 180 degrees celsius

1. Place dry ingredients in a bowl everything except the hemp seeds, chia seeds, pumpkin seeds,. Then add wet ingredients and stir until it’s combined.

2. Place mixture onto a baking tray thats lined with baking paper and bake in oven for 10-15 minutes until lightly brown.

3. Remove from oven, transfer back to bowl and add the hemp seeds, chia seeds, pumpkin seeds then combine.

4. Store in a airtight jar

Tip: I put some of the muesli on my nana ice cream this morning and it was extremely delicious. (;
